The Development of Cookies from Modified Cassava Flour with Soy Isolate Protein (ISP) Substitution as an Alternative Supplementary Food for Pregnant Women with CED

Chronic Energy Deficiency (CED) in pregnant women can be caused by direct and indirect factors. The lack of energy protein intake during pregnancy has been proven to increase the risk CED women. purpose this study was analyze differences acceptability organoleptic properties panelists, as well nutritional content cookies based on Modified Cassava Flour with soy isolate substitution. conducted experimental research a Completely Randomized Design used. from June December 2022. This study, which involved production substitution isolated flour hedonic testing, at Culinary Laboratory Universitas Esa Unggul. statistical test used see difference nutrient between treatment levels Cookies Anova Ducan’s advanced test. results showed that there significant quality terms taste texture (p<0.05). There among formulas taste, color, aroma, carbohydrates, fats, proteins conclusion best formula is F3, contribute needed CED.
